Atlanta Citrus Crisps
1/2 cup butter
1 cup sugar
1 egg, well beaten
rind of 1 lemon and 1 orange, grated 3 Tbsp. orange juice
3 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. soda

Cream together butter and sugar and add well- beaten egg. Blend them well. Add grated rind and fruit juice. Sift together baking powder, salt, and soda, and add to butter-sugar mixture. Mix them thoroughly. Compact into one or two cylinder shapes and chill at least 4 hours. With floured rolling pin roll dough out on lightly floured surface to 1/4 inch thickness. Cut dough into 2 inch circles. Preheat oven to 325 degrees. Bake on lightly greased cookie sheet for 10-12 minutes. Makes about 40 cookies.
